This Salmon Asparagus Frittata recipe is the perfectly indulgent brunch recipe that couldn’t be easier. You don’t have to be a chef to create a spectacular meal when you start with great ingredients!

Diced potatoes are pan fried and then combined with salmon and asparagus, topped with an egg mixture and baked until set. Serve it alongside a fresh fruit salad or fruit dip for the perfect Mother’s day brunch or on its own for a weekday dinner!

I’m a big fan of anything that saves me time in the kitchen which is why I am so excited to partner with Simply Potatoes and their amazing line of ready-to-cook potatoes! They’re the perfect addition to create a simple and elegant breakfast recipe!

Salmon asparagus potato frittata has never been easier thanks to Simply Potatoes Diced Potatoes. Look for the green package with pink writing “Diced Potatoes” at your local grocery store. They’re such a time saver! Having a bag on hand makes for a last minute breakfast (or easy dinner side dish).

What Is A Frittata?

A traditional egg frittata is made with a layer of fried potatoes topped with an egg mixture and baked until set. A frittata is an Italian dish similar to a quiche or omelette, but containing potatoes. Frittata loosely translates to “fried”.

Frittata can contain a whole spectrum of additions depending on what you prefer. This salmon asparagus frittata is absolutely delicious, but try some of these simple additions:

  • MEAT: diced ham, shrimp, bacon, Canadian bacon, diced chicken, breakfast sausage
  • VEGGIES: diced peppers, green onions, jalapenos, celery, broccoli, carrots, artichokes, mushrooms
  • CHEESE: cheddar cheese, mozzarella, ricotta, cream cheese, parmesan, swiss, feta
  • OTHER ADDITIONS: sun dried tomatoes, capers, pickles, salsa, sour cream, red pepper flakes

How To Make A Frittata

To make this salmon asparagus frittata recipe:

  1. FRY: fry Simply Potatoes Diced Potatoes over medium heat for 15 mins in some olive oil. Make sure you use an oven safe pan, I love making salmon asparagus frittata in my cast iron!
  2. ADD: add the sliced salmon, green onion, and asparagus.
  3. MIX: Mix the egg mixture: eggs, cream, dill, salt, and pepper.
  4. POUR: Pour the egg mixture into the pan. Top with cheese.
  5. BAKE: Bake the frittata for 12-14 minutes or until eggs are set. If desired, broil for an additional minute or two to brown the cheese.

Can You Freeze Frittata

You bet! Frittata freezes well. It should last about 2-3 months in the freezer.

To reheat frittata, use the microwave or the oven. Frittata can sometimes come out soggy, so I suggest using the oven and baking it at 350°F until heated through.

This salmon asparagus frittata recipe is the perfectly indulgent and healthy brunch recipe that couldn’t be easier. It’s the perfect breakfast, brunch or dinner!

  • 1 Tablespoon olive oil
  • 1 package Simply Potatoes Diced Potatoes (20 oz)
  • 1 cup roasted asparagus
  • 4 oz smoked salmon
  • 1 Tablespoon green onion (chopped)
  • 2 Tablespoons olive oil
  • 8 eggs
  • 1/4 cup light cream
  • 1 teaspoon fresh dill (chopped)
  • salt and pepper (to taste)
  • 2 oz soft goat cheese
  1. Preheat oven to 400˚F.

  2. Heat olive oil in 10 inch skillet. Add potatoes cover and cook 15 minutes stirring occasionally.

  3. Slice salmon into 1″ strips. Chop asparagus into 2″ pieces.

  4. Remove the diced potatoes from the heat and top with asparagus, salmon, green onion, dill, salt and pepper.

  5. In a medium bowl, whisk eggs, cream, dill, salt and pepper.

  6. Pour egg mixture over potatoes, top with goat cheese. Bake 12-14 minutes or until eggs are set.

  7. Broil 1-2 minutes. Cool 5 minutes before cutting.
